Country Ham and Corn Casserole

(Finished Casserole featured next to her Co-Op plates!)

– 2 cups Ham-Steak (cubed)
– 1/2 cup green onions (chopped)
– 1/2 cup butter (melted)
– 3 eggs (beaten)
– 1(14.75oz) can Cream-Style Corn
– 1 (11oz) can whole kernel corn with red and green peppers (drained)
– 1( 7-8.5oz) pkg. corn muffin mix (ex. Jiffy Brand)
– 1 cup cheddar cheese (shredded)

Slow Cooker Pineapple Glazed Ham Recipe

– Co-Op Ham Steaks

– 1/3 cup brown sugar

– 1 20oz Can crushed pineapple (not drained)

– 2 Tbsp Dijon mustard

Sage Pepper Ham Steak and Potato Planks

– Ham Steak

– 3 Potatoes, cut longways

– 1 can green beans

– Rubbed Sage

– Salt/Pepper


1) Sauté Ham on a large skillet seasoned with rubbed sage, salt, and pepper.

2) Slice 3 potatoes longways, season with seasoning salt (such as Lowry’s) and fry in oil.

3) Use can of green beans as a side.

King’s Hawaiian Baked Ham and Swiss Sandwiches

This was sooo delicious! Although you never see Hawaiian Rolls at the coop, they are pretty inexpensive and really make this meal delicious! If you didn’t want to buy Hawaiian Rolls, I’m sure you could use any other soft bread and it would be delicious.


1 12 pack of King’s Hawaiian Original Rolls (or a co-op bread… preferably soft)
Ham Steak (Co-op ingredient!)
1 lb. Swiss cheese, thinly sliced (I bought provalone)
1 1/2 sticks butter
3 tablespoons Dijon mustard
1 1/2 teaspoons Worcestershire sauce
3 teaspoons of poppy seeds
1 onion, chopped
